Default Fridge way too cold, like a freezer

Hello, I'm new to this forum and I'm not sure anyone here can help but my fridge seems to be having the opposite problem to everyone else's.
It is so cold it's actually freezing the food,even though I have set the Thermostat to one. Now I like crisp crunchy celery but when it gives you brain freeze and you need an ice pick to get through it you just know it's too cold. I have a block of ice about 3cm thick attached to the back of the fridge (inside) and have to defrost about once a week to keep it under control and ensure I don't get any polar bears ranging around inside.
I thought it must be a dodgy thermostat but from what I've read it seems that that seems to make the fridge warm.
It's constantly humming as well, so although it's working and I can keep food fresh for months in it, it's not really eco friendly and tomatoes aren't quite the same when they have defrosted. Does anyone have any suggestions please?

The cold air comes from the freezer through an adjustable opening. The refrigerator temp. control opens and closes this opening either mechanical or electronically depending on your model. Look for this opening at the top of freezer or fridge. Close it some to see if that's your problem.
