How can I increase the auto defrost cycle time (I live in a dry climate) or turn it off?

The defrost cycle in your fridge is controlled electronically. Nothing you can change.

What if I diconnect the power to the timer?

This is not a timer - it is an electronic board that controls the whole fridge.
