Is there any way to bypass the defrost mode? We use this refrigerator/freezer in a lab and need it at a constant temp.

There is no way to bypass the defrost cycle and have the fridge work properly.
If you did bypass the defrost cycle the ice would build up on the evaporator and cut the cold air flow to the fridge section.
