Oven is overheating by more than 25 degrees. Is it possible for me to replace the thermostat myself? How difficult is it?

Replacing the thermostat is not that hard to do but you must be careful not to damage the sensing bulb.
Unplug the range.
Remove the knob.
Pull the range out and remove the back panels.
Make sure you make your wires so you know where to put them back.
Here is a link to your
range model JCP67T1
.
