Yes the oven thermostat is the only thing that controls the temperature in the oven.

Can you please supply your full model number as you are missing characters at the end.

Yes the sensing bulb come with the oven control.

Your oven control is number 14 on the diagram. It is a so known as the thermostat.

Here is the link to your range model JBS27BH2BB.

Default Oven not holding temp

I have a Frigidaire Model FGF378ACG gas range. Oven holds 400 F ok; at 475 setting, it goes to 400 & then drops; at 350, burner starts after 2 minutes, preheats to 380 & then drops to about 200 or does something else crazy.

Man at parts store told me it sounds like either temp sensing probe or ignitor. Even though ignitor glows, he said I should check its amps which must be 3.3 - 3.6 amps. I assume it is DC. If amps aren't in this range, it shuts off safety valve, or whatever.

Can someone help me narrow down the likely source of problem.

It not DC amps and it could be the ignitor just pull the bottom draw out and hook a amp meter to the one wire going to the ignitor
