I need burner gaskets for my stove top, but the part (7201P050-60) is no longer available. Is there a sheet of material that I can but to cut my own gaskets? or is there a product in a tube that I could just squeeze out like chalking?

You should contact a local gas company and see what they use.

actually, it is abour 3-4" in diameter, and appears to be a seal between the stove top pan that the burner sits in. the hole in the stove top has a hole with the supply gas pipe and sitting on top of this pipe is the burner. It appears to be a friction or gravity fit, and there is a gasket between the bottom of the burner head and the top of the stove top. The gasket that I'm talking about is not something that is sealing the actual gas.
