after an hour of use of the grill, the fan shuts off. after the unit completely cools, the fan will work again.

There may be a problem with the grill element shunt.

The next time you are using the grill and the fan stops use the fan switch and see if the fan will run.

If the fan runs then it is a problem with the shunt if the fan does not run it is the fan motor.

The shunt is an electrial connection that is operated by the grill element.
